Ingredients:

4 sweet potatoes, peeled and cut into

1-inch cubes

3 to 4 Tbsp. extra-virgin olive oil

3 to 4 Tbsp. honey

1 ½ tsp. cinnamon

Salt and freshly ground pepper, to taste

Preheat the oven to 375 degrees. Lay the sweet potatoes out in a single layer on a roasting pan. Drizzle oil and honey over the potatoes. Sprinkle cinnamon, salt and pepper. Mix potatoes to evenly coat. (Tip: Line the bottom of pan with tinfoil for easier cleanup.) Roast for approximately 40 minutes, mixing half way through cooking. Potatoes are done when tender.
Optional add-ins: Try adding a few sprigs of fresh rosemary prior to roasting, or adding chopped butternut squash in place of one the sweet potatoes.
