1 Large Fryer Chicken
Salt & Peper
1 Large C. Crushed tomatoes
1 Can Rotel Tomatoes (mild or hot)
4 Can Sliced or diced white potatoes undrained
1 Can Mexican Corn
1 Bag Frozen chopped onions (10oz or 12 oz.)
1 or 2 Cans Chicken Broth
Season chicken with salt and pepper. Cook chicken in crock pot. (I cook my chicken over night in the crock pot). Let chicken cool and de-bone. Put shredded chicken into a 5 qt. crock pot and add remaining ingredients. It is best to squeeze the potatoes in your hand or mash with a fork so they will blend into the mix better. Mix ingredients together with a wooden spoon. Use chicken broth for the consistency you desire. Do not use water. Cook on low for 3-4 hours. If you like it spicy, add Louisiana hot sauce to taste.
