2 Fryers or 6 lb. chicken breast or legs/thighs
mix with 2 T. salt and pepper boil until tender
Cornbread Dressing
3 c. self-rising cornmeal (White Lily Preferred)
1 c. self-rising flour
3 c. buttermilk
3 eggs
½ c oil

Mix and bake until brown. Do not overcook.
Mix 6 biscuits (I have used hot or hamburger buns and loaf bread instead of biscuits)
12 c. cornbread
9c. chicken broth
2 cans cream of chicken soup
1 can cream of celery soup or mushroom
1 c. chopped onions
1 c chopped celery. Blend onions and celery in blender.
6 eggs beaten
½ c. milk
1 T. black pepper or more
Sage (to taste)
Mix real well. Add chicken and bake at 375 degrees.
Enough for 2 12x15 in pans or casserole dishes.
Freezes well (uncooked).

I also make the dressing without the chicken.
